The reason why wine is made in oak barrels is that storing wine in oak barrels is an important post-culture process of wine, and its main function is to improve the color, taste and aroma of wine. Polyphenols and aromatic substances in oak barrels can make wine more mellow when soaked. Oak barrel has good air permeability, and a proper amount of air can slowly penetrate into the barrel through the "pores" on the barrel wall, so that the wine can be properly oxidized, thus making the sour wine soft, round and delicate. At the same time, the slow oxidation process can also polish the wine, making the color of the wine more vivid, stable and more pleasing to the eye.
