1, Kweichow Moutai
Moutai is produced in Maotai Town, Chishui River, west of Zunyi City. Maotai Town has a long history of brewing, and brewing technology was initially formed as early as the Ming Dynasty. During the Qianlong period of Qing Dynasty, Maotai Town became an important port for Sichuan salt to enter Guizhou, where salt transportation flourished, the demand for wine surged and wine production developed rapidly. During the Daoguang period, there were more than 20 brewing workshops in Maotai Town, and the output reached 170 tons.
Maotai liquor is made of high-quality sorghum and wheat, carefully brewed by the unique traditional technology in China, after eight twists, seven distillations, nine fermentations and long-term cellar storage. The whole production cycle takes 9 months, and it usually takes 5 years to become a finished product. Maotai liquor is mellow and white, crystal clear, with outstanding sauce flavor, elegant and delicate, low but not light, strong but not bright, and long aftertaste. 2. Weining ham
Weining ham is a traditional specialty of Guizhou, which has a history of more than 600 years and has long been famous at home and abroad. Weining is more than 2000 meters above sea level and belongs to the cold Wumeng Mountain. The mountains are full of fertile pastures. Animal husbandry is very developed in history. Local Yi people have the custom of grazing in the mountains. Pigs, cattle and sheep are in the same group, with a large amount of exercise, well-developed pig legs, strong and full muscles, and fat and thin. Local fine breeds such as Cole Pig and Fadi Pig have the characteristics of roughage tolerance and cold tolerance, and the lean meat rate is high. From the Hongwu period of the Ming Dynasty, the Yi people here liked to smoke bacon and store it for eating, which created conditions for making Weining ham. Weining ham is brownish red in color, bright in color, small in bone and thin in skin, tender in meat, delicious in flavor, and not tired of eating more.
Weining ham is made entirely by traditional methods. After killing the pig, don't blow or scrape, then use a knife to repair the fresh legs into beautiful pipa legs or cross legs, remove the greasy skin of miscellaneous bones, break the snow tendons and squeeze out the blood. Wipe the fried salt with the amount of 10: 1, and add some spices such as fennel and pepper. The other is not air-dried, and the legs are hung on a fire pit and smoked with wet pine branches, wet cypress branches and limp stems, because the smoked meat contains acids, aldehydes and phenols, which is sterilization, delicious and storage-resistant. Generally, this smoked leg can be stored for five or six years, and the bacon tastes richer and more fragrant without oil flowing.
Weining ham can be divided into "old legs" and "new legs". Those cured in the first year are called "new legs", and those sold after autumn are called "old legs" or "old legs". The inside of the new leg meat layer is fragrant, layered and delicious. After the old leg is cut, the fat meat is pink, the lean meat is crimson, the meat is firm, the water is less, and it is oily and delicious.
The hams produced in Weining, such as Blackstone, Admiralty and Mozhan, are the best, just like Xuanwei ham. In the old society, Weining ham was mostly distributed in Xuanwei, Yunnan because of inconvenient transportation. At that time, a considerable part of Xuanwei ham was Weining ham. Now the canned food processed with Weining ham has been exported to Japan, Southeast Asian countries and Hong Kong and Macao, which is welcomed by consumers.
3. Duyun Maojian
Duyun Maojian tea is produced in duyun city, southern Guizhou. It is listed as one of the famous tea treasures in China with its beautiful appearance and unique style. Duyun Maojian tea has a long history, which has been more than 500 years. According to historical records, as early as the Ming Dynasty, Duyun Maojian tea was the best tribute to the imperial court and was deeply loved by Emperor Chongzhen of the Ming Dynasty. Because it looks like a fishhook, it was once named "fishhook tea". Guizhou is located in the plateau, and the Maojian tea producing area in Duyun is characterized by mountains and peaks, towering cliffs, fog-locked clouds and fog-wrapped clouds. The soil is deep, loose and moist, plus rainfall. Natural conditions such as perennial temperature and sunshine are suitable for the growth of tea trees, so Duyun Maojian tea is unique.
4. Changshun Green Shell Eggs
Changshun green shell laying hens are native to Guyang Town, Changshun County, which is remote and backward, with blocked traffic, steep terrain and complex geographical location. According to rural customs, giving gifts to relatives, emigrating, green-shell eggs and green-shell laying hens also take root and develop in different places as gifts. In the 1980s, due to the serious plague, chickens raised by farmers were almost extinct, and only green-shell hens raised in remote villages living by mountains survived and were preserved. In the 1990s, although the development of green shell laying hens was slow, with the prevention and publicity of epidemic prevention departments, people knew something about plague and the number increased. At the end of 1990s, due to the great attention of the animal husbandry department, the application for conservation of green shell laying hens was launched, and it was implemented in 2000, with a total investment of 654.38 million yuan. More than 20,000 hemp feather, grey feather and Kuroha black-bone chicken were bred by purification and rejuvenation. Due to limited funds, this variety has not formed a scale, but it has improved the quality and quantity to a certain extent, further consolidating and strengthening the strain.
5. Liping Xianghe glutinous rice
Liping Xianghe Nuo is mainly produced in Qiandongnan Prefecture of Guizhou, especially Liping County. "Liping Xianghe Nuo" is a precious and unique local crop genetic resource in China, and its protection scope covers 18 administrative regions under the jurisdiction of 65438 townships in Liping County.
