"Ice Valley in Cold Zone" brand ice wine is produced in Liaoning Province and operated by Huanren Southern and Northern Dynasties Trading Co., Ltd. It has four sub-brands: Ice Valley in Cold Zone-Dongxiang, Ice Valley in Cold Zone-Bingjian, Ice Valley in Cold Zone-Jingyuan and Ice Valley-Xuexia. Take Dongxiang as an example. The picking time of Vitter ice grapes used in Dongxiang ice wine is about 1 month. At that time, the average temperature of ice vineyards in Liaodong mountainous area was below zero or even dozens of degrees. After long-term air-drying and freezing, the water content of ice grapes is very low and the sugar content is very high, but the yield has dropped several times. Based on an acre of land in September, the yield of planting red grape varieties is 2000~2500 kg, while the yield of planting Vidal ice wine is about 800 kg. Red grape varieties can be harvested at this time, but the harvest of ice grape varieties will be postponed until next year 1 month. At this time, the yield of harvested ice grapes is only about 1/3 of that in September, and the obtained ice grape juice is less fermented because the peeled pure juice is air-dried and frozen. At the same time, because it is harvested in winter, it increases the labor intensity and difficulty of workers, leading to a substantial increase in labor costs, which will eventually be reflected in the cost composition of ice wine. In addition, because ice grape juice is produced by slow fermentation at low temperature, the fermentation time is particularly long, about 1~2 years, while the fermentation time of most ordinary wines can be completed in just a few months, which also increases the cost of ice wine. In addition, the special requirements of ice wine storage and transportation also increase the cost of ice wine. The storage and transportation of ice wine at low temperature requires special treatment of wine cellar, warehouse and transportation equipment. Finally, it should be emphasized that the special requirements of the growing environment of ice grapes limit the production of ice grapes. At present, only a few regions in the world have natural producing areas of ice grapes, such as German, Austrian, Canadian and China. According to the principle that things are rare, ice grapes are naturally not cheap, and the price of ice wine brewed with ice grapes is naturally high. Of course, the disorder of circulation and various expenses also affect the price of ice wine.
In fact, ice grapes are not as expensive as people think. The reason why they feel "expensive" is that the production time of domestic ice wine is not long, and the required ice wine has always been related to imports. Imported ice wine has to pay customs duties, which has contributed to the price of imported ice wine. At the same time, with the rise of domestic high-quality ice wine, the habit of Chinese people relying on foreign wine for a long time has not fundamentally changed, and the habit of refusing to consume domestic ice wine has affected the opportunity for Chinese people to enjoy high-quality and cheap ice wine. However, the nonstandard wine market in China and the crisis of food safety and trust make Chinese people flinch from buying domestic wine, which is very disappointing. I went to a wine fair a few days ago, and the organizer even made it clear that as long as it is not domestic wine, as long as it is imported wine, imported wine is "safe" and domestic wine is not safe.
