Which specialty is Zhengzhuang noodles?

Zhengzhuang noodles are a specialty of Anping County, Hengshui City, Hebei Province. Zhengzhuang Village is characterized by Shenggu brand handmade noodles. Made from high-quality wheat, naturally without any additives and purely handmade, it is a veritable green food. It has become a brand product of Zhengzhuang Village and has driven the whole village to develop green industries.

Zheng Zhuang was mainly an immigrant from Shanxi in the second year of Yongle in the Ming Dynasty (1404). They originally had the skill of making "tribute noodles", and they also brought strong wheat seeds. They grew their own wheat, processed the flour with their own stone mills, and used the good hydrated noodles from the Hutuo River. After thirteen traditional processes, It takes two days to complete. The noodles are as thin as hair and hollow and are known to have five characteristics: "clean, white, pure, thin and dry". The food is flexible, smooth, chewy and nutritious. It is the first choice nutritional product for the elderly, children, pregnant women and patients. It is the first meal for local guests. According to the memory of an 80-year-old man still alive in the village, his ancestors sent noodles to Beijing as "tributes." It was only later that the road to the palace was discontinued and it became a traditional popular product among the people. Without any hype, Zhengzhuang noodles were once "tributes" and "palace noodles". It has a history of more than 600 years and should be a traditional famous specialty of Anping.

Now there are more than 300 households in Zhengzhuang, and half of them still inherit this traditional craft. They select high-quality wheat and grind it themselves, or use special flour from famous factories as raw materials. They strictly follow traditional production techniques, but they are more advanced and scientific than in the past. The noodles they produce are completely comparable to the so-called "Gong Noodles and Gong Noodles" on the market, but there is no correct name, no registration, and no exquisite packaging. I believe that Zhengzhuang Noodles will one day go to the grand hall, go to big cities, go to supermarkets, go to the reception window of the outside world, become famous all over the world, and bring glory to Anping.
