What is edible fungus?

Edible fungi refer to edible fungi mainly mushrooms. Unique flavor, rich nutrition, high protein content, up to 18 kinds of amino acids, containing a variety of vitamins, sugars and mineral elements. There are also some health foods with different medicinal values. Artificial cultivation, with fast reproduction and high economic benefits, has attracted wide attention at home and abroad. In recent years, the output and sales have been greatly improved. China is rich in macrofungi resources, including almost all the known important edible fungi species in the world. In China, domestication and cultivation, mycelium culture, separation and purification of aroma substances and chemical composition analysis of wild edible fungi have been deeply studied.

At present, there are about 2000 kinds of edible fungi found, and experts estimate that there may be 5000 kinds of edible fungi in nature. China is one of the countries with the largest variety of edible fungi in the world. At present, there are more than 980 recorded varieties of edible fungi, of which 500 have medicinal effects. Up to now, hundreds of mycelium fermentation strains have been domesticated and cultivated in China, of which more than 60 species have been cultivated and more than 30 species have been commercialized.
