Gu: Can the prince tell us your real name? What was life like in your hometown before you came to Beijing?
Wang: My name is Wang. I was born in 1984. I am the only child in my family. After graduating from junior high school, my father asked me to go to a sports school. If I fail, my father and I will go to Hubei to sell candied haws. The first time, I carried a whole bunch of candied haws on my back and ran 60 miles. I only sold one bunch, only 50 cents, and I got lost when I came back. At that time, as soon as I saw my father, my tears came down. At that time, I was hungry and tired. G: How did you drift north to Beijing?
Wang: Later, my father and I went back to our hometown. At that time, the Spring Festival was coming, and all the people who went out to work in the village sent money back. Seeing that others have made money, their faces are particularly bright. I feel a little sad. I think as a man, I have to contribute to my family, so I have to go out.
I went to the town to look for a job, and then I saw a small advertisement: the public security bureaus in Beijing, Guangdong and Shenzhen wanted security guards. I chose Beijing and came here. The person in charge here asked us to pay the employment fee and clothing fee, and almost all my money was paid.
G: So you were tricked into coming to Beijing? How is the security work done?
Wang: You can say that. Because I am tall, I was chosen by the battalion chief to be a security guard. The salary is low, but the food is ok. At least I can get a foothold in Beijing.
Because I just became a security guard, according to the usual practice, "veterans bully new recruits" and often do odd jobs such as cleaning and fetching water. After working for a month, I got acquainted with the teachers in the canteen. They all supported me and said, "If you are bullied again in the future, we will protect you." Once, I drank half a catty of wine, strengthened my courage and reasoned with the veterans. "Everyone comes out to make a living, and they are all equal. Gu: Then why did you switch to making pancakes?
Wang: Security work is a "youth meal". After marriage, it is difficult to support the family. Therefore, I especially envy technical work. With technology, I can eat it everywhere. I went to consult the chef in the canteen, and he promised to teach me how to make Chinese cakes after I finished my work. After studying for half a year, I felt that "I am a master" and wanted to come out and apply what I have learned.
Gu: What was your experience when you first started making pancakes?
Wang: I quit my job as a security guard and looked for a job in Beijing with my bag on my back. At that time, when there was no money to eat, I went to the restaurant to wash dishes for others. After I finished my work, my boss gave me a bowl of rice, and I went to several places. Later, I went to a restaurant, and the boss saw that I was clean and hired me. I thought I had to put down my master's airs when I first came out to do things, and I worked there for a while from scratch.
Once, I told my boss that I would make snacks. The boss is very happy. He said, "I just need a pastry chef," so he wouldn't let me wash the dishes and let me be a pastry chef. I honestly said to him, "I just came out of a technical school. I can do it, but I'm not good at it." The boss said, "it doesn't matter, you do it." Well done, we sold it; If you can't do it well, you will dump it. " In this way, I became a "big pastry chef". I think this opportunity is particularly good. Practice your craft in the kitchen after work every day, and practice every snack three or four times. During that time, I was often busy to 12. After seven or eight weeks' practice, the baking technique is good.
Sometimes when the manager eats delicious snacks outside, he will buy two copies, one for the boss and one for me. He doesn't want me to eat for free, but he wants me to study how to do it and how to do it. I can't do it myself, so I went to the technical school to ask the teacher. For more than half a year, I feel that my craft is good and I want to do it myself. The boss asked me to leave my craft behind, so I took two apprentices to teach them, so I quit my job and went out to do it myself.
How did you come to our school?
Wang: At first, I set up a stall in Xizhimen to sell pancakes, and the business was very good. From 5 am to night 10, the pancake master never stops. I wake up naturally in the morning and count my money at night to get cramps in my hands. But this is a guerrilla war. When you see the chengguan coming, you have to run. If you are caught, you will be fined 200 yuan. Sometimes, if you are caught four times a week, you will be fined 800 yuan.
I asked the schools near Xizhimen, and I heard that the Central League School was interesting, so I came. Just tell the person in charge of the school to buy equipment and go to the cafeteria to make pancakes.
G: I just came to school. How's business?
Wang: At first, I sold it in the canteen. Because we just came in, everyone didn't know each other, so the business was not good, and we sold more than a dozen every day. When there were few people, I watched several classmates come in and made pancakes for them, saying that the boss invited them to try them. They felt good after eating and came to buy my pancakes the next day. In this way, the market slowly opened, and in less than half a month, there was a long queue in front of my pancake stall. Sometimes at night, the boss will say "it's too out of the way" and drive me outside to sell pancakes.
Ancient times: The Prince has a story of "three in and three out". Can you tell us which one impressed us the most?
Wang: On one occasion, during the Beijing Olympic Games, the school closed its business because of the problem of environmental sanitation image. I went to work in the northern suburbs, but soon my boss called me and told me to come back quickly, saying that my classmates posted on the Internet looking for me. Someone said, "The pancake prince is gone, what shall we eat?" Thank you very much.

Wang: No, the students are all of high quality. They put their own money in and find their own money. I still remember clearly that a classmate graduated. He owed me more than ten yuan for eating my pancakes, and he went back to school to pay back the money after graduation. I am very touched.
My classmates are also very kind to me. When I was sick, some classmates gave me medicine. One is from Weifang, and the other went to the Northeast for graduate school. I remember everything. I have a good relationship with my classmates, which is necessary.

Q: How did you stay optimistic in the process of "drifting north"?
Wang: I have a family, and I have to work no matter how hard and tired I am. As a man, he should be the pillar of the family. Get up at 5: 30 every morning, go back to sleep at 2 noon, and then do it at 1: 30 in the afternoon. I am tired and sleepy when I go home every day, but I feel happy and energetic when I see my two children at home.
Q: There are three pancake chefs in Zhongqing Campus. What do you think of this competition?
Wang: Whoever does it well will eat it. There is a saying in our industry that "every department store has hundreds of customers". You refine your craft step by step, and people will buy you if they think it's delicious.
Q: Pancakes are so delicious now. Do you have any plans to open a branch?
Wang: Yes. However, the head office is still in Zhongqing Academy, starting from Zhongqing. This is called "knowing each other and bumping into mountains" because I have feelings for Zhongqing College.
Q: What do you think is the most important thing in cooking?
Wang: The most important thing is conscience. Use fresh and good materials, so as to earn repeat customers. I want to eat a pancake made by myself every morning to see if it tastes right. It tastes good and can be sold; Incorrect, find the reason.
