Walking into the factory, I saw a clean environment and orderly working procedures. Although it is a domestic manufacturer, we saw the advanced assembly line and skilled technical level in the workshop and felt the modern technical production. The factory has its own timetable and will strictly abide by it. Even during lunch break, every worker will hand over his work in an orderly way without panic. On the issue of meals, the factory also has its own characteristics. That is, from the top to the ordinary workers, the meals they eat are the same, without any specialization.
Second, the learning process
The practice of factory report is mainly based on curriculum practice, which is an important teaching link for class teachers in senior high schools to learn food science and engineering, aiming at broadening their horizons, enhancing their professional awareness and consolidating and understanding professional courses. The process of making ice cream can be divided into two processes, namely pre-treatment and post-treatment. In the former part, ingredients are mixed, homogenized, sterilized, cooled and cured. In the later stage, it is mainly freezing condensation, molding and hardening. The processing flow is as follows: mixing raw materials → filtering → homogenization → sterilization → cooling → adding spices → curing → freezing → filling → hardening → packaging → storage.

3. Homogenization.
In order to make ice cream products fine in texture, stable and lasting in shape, improve the expansion rate and reduce ice crystallization, it is necessary to homogenize the mixed liquid. The temperature should not be too low or too high during homogenization. Low temperature makes the viscosity of feed liquid increase, and the homogenization effect is not good, so it is necessary to extend the stirring time when freezing. If the feed temperature exceeds 80℃, it will promote fat aggregation and reduce the expansion rate. The homogenization pressure also has a certain range, and the homogenization effect cannot be achieved if the pressure is too low; Too high will increase the stiffness of the feed liquid, and air is not easy to mix during freezing and stirring.
4. maturity.
The purpose of curing is to make protein, fat clot, stabilizer and other substances fully hydrate and expand, improve viscosity, make the mixture have good foaming property, which is beneficial to improve the expansion rate during freezing and stirring, and shorten the freezing time. It needs to be stored at 4 ~ 5℃ for 8 ~ 24 hours after ripening. After ripening, the container should be covered with dust to prevent the entry of bacteria and odor.
5. Freeze.
Freezing is to mix the mature mixed base material with air, and freeze it through the strong stirring of the ice cream machine, so that the product can be solidified into a semi-solid state, and the ice cream product with fine structure, good shape and high expansion rate can be obtained. Therefore, freezing is an important process in ice cream production. Two links should be paid attention to in the production: the mixing amount of air (to ensure the expansion rate) and the freezing temperature (to make the ice crystals fine and granular).
(3) packaging experience
Packaging is the last process before the finished product is completed, and it is also an important part of a product. Including the quality inspection of the previous process and the packaging of products. Quality is the guarantee of quality.
