Historical legend of Dali elbow

During the Hongzhi period of the Ming Dynasty, there was a chef named Li Yushan in Tongzhou (now Dali County), who was famous for his exquisite cooking. One day, Shaanxi Futai visited Tongzhou, and the county magistrate sent someone to find Li Yushan to please Futai. Li Yushan was sent to cook in the house. Li Yushan is an honest man, who was drinking at a friend's house. He has long been dissatisfied with this county magistrate and now wants him to cook. He pondered over the glass for a while and said to the messenger, "reply, sir, I'll be right there." With the state housekeeper, wicked, give yushan a problem. When he saw Yushan coming, he got some minced meat and rotten bones for Yushan and ordered the banquet to be held within two hours. In the kitchen, I saw Yushan dancing with a knife and spoon. In less than two hours, the food was ready. During the dinner, Fu Tai ate one of the dishes and saw meat in front and several bones below. He asked incredulously, "This dish ..." When the magistrate saw it, he was surprised to see a few bare bones on the plate, so he wanted to ask the culpability of Yushan. Yushan was placed before the banquet, and the magistrate asked, "What is this dish you cooked?" Yushan said unhurriedly, "Calm down the magistrate," and turned to Futai, "Futai didn't know that our magistrate ate not only meat but also bones." Futai is an honest official. He listened to the implication of Yushan, and before the magistrate found it, he rewarded Yushan with twelve taels of silver and went home. The next day, Fu Tai made a private visit in makeup, asked the magistrate about his evil deeds and severely punished him. Before leaving, Fu Tai asked the name of the dish that Yushan ate that day. Yushan said smoothly, "Bring an elbow." Later, this dish was handed down. The elbow with handle is a dish made of pig's forelegs. Exquisite workmanship, small fire steaming, purplish red color, shaped like a futon, fat but not greasy, thin but not firewood, long taste and unique flavor. It has become a famous dish with unique local characteristics in Dali.
