In May, 2020, Consumer Report sent the mainstream product 12 oyster sauce to an authoritative third-party testing organization, and tested the umami indicators such as amino acid nitrogen, protein and monosodium glutamate, and other safety indicators such as preservatives, volatile base nitrogen and heavy metals.

1. According to national standards, oyster sauce must be made from oysters as the main raw material. However, it is a mystery how much raw materials are used in oyster sauce, because the standard does not stipulate the amount of oysters, and manufacturers rarely mark them. Only Wei Xin Heda Meizhen Oyster Sauce and Weishi David's Fresh Oyster Sauce are labeled with the ingredients of Oyster Sauce.

2. The umami values of Xinhe and Vista are 3.0 and 2.8 respectively, which are rich in authentic products; Pearl River Bridge, Laocaichen and many other umami values are 1.8, which is inferior.

3. Sodium glutamate (monosodium glutamate) was added to the products submitted for inspection in paragraph 12. Among them, Lu Hua and Chubang have the highest content of sodium glutamate, reaching 5.0g/ 100g, while Donggu has the lowest content, only 3.3g/ 100g.

4. The preservative content of12 oyster sauce meets the national standard. However, the amount of preservatives added to two kinds of oyster sauce, such as Chubang and Laocaichen, exceeded the stricter oyster sauce industry standard.

The new volatile base nitrogen content is high, which indicates that the freshness of raw materials of oysters may not be as good as other 1 1, or it may be caused by the high addition of oyster juice; Haitian, Lee Kum Kee, Jiajia, Chubang and Laocaichen are all below the detection limit, and the raw materials of oysters are relatively fresher.

6. In12 oyster sauce, only Vista detected some heavy metal cadmium, the content was 0.04mg/kg, but it met the standard limit (0. 1mg/kg), so consumers need not worry.

7. The comprehensive evaluation results showed that Xinhe and Vesta oyster sauce performed well, with the total CCR scores of 8.9 and 8.3 respectively. The CCR of Chubang, Zhujiang Bridge and Laocaichen are only 6.8, 6.8 and 6.3 respectively, ranking lower.
