According to modern scientific research, "Haiyan Shenquan" is transparent, slightly sweet and weakly acidic, which is very conducive to saccharification and fermentation and belongs to high-quality brewing water. Today, most wineries directly use tap water as water source, but Jin Hui Winery in Gansu still insists on using "Haiyan Shenquan" well water to make wine.
