The "Old Tongcheng" bean skin in Wuhan is very famous. How did the name "Old Tongcheng" come from?

The Wuhan snack "Old Tongcheng", formerly known as "Tongcheng" restaurant, was opened by Zeng Houcheng, a native of Hanyang, in Dadi Road 1929. At the beginning of the business, it was only open in the morning, noon and evening. 1947, after the victory of the Anti-Japanese War, Zeng Houcheng returned to Wuhan from the home front. He made a new page on the original site, decorated it with big events, filled up the storefront, increased the variety of business, and changed the signboard into an "old Tongcheng" food store to show his old qualifications and big hands.

Zeng Houcheng heard that Gao Jinan, a famous chef who had worked in several places in Wuhan, had excellent skills in making bean skin and hired him heavily. He intends to take Master Gao's specialty "Three Fresh Bean Skin" as a breakthrough, and set up a neon sign of "Bean Skin King" on the third floor to attract customers, and it really worked wonders.

Bean skin was originally a kind of food in rural areas of Hubei Province, spread to cities, filled with glutinous rice and leeks, and was very popular with diners. Yang Hongfa Bean Skin Museum in Wangfukou, Wuchang, opened in Tongzhi period of Qing Dynasty. It is the earliest bean skin shop in Wuhan, selling slippery bean skin, which is characterized by heavy oil, crisp outside and soft inside, and is called "Yang bean skin". Later, it developed into assorted bean skins and three fresh bean skins. The three fresh bean curd skins in Laotongcheng are mainly from "Yang bean curd skin", just as Gao Jinan, the king of bean curd skin, said, "It can't be said that Wuhan bean curd skin was initiated by Gao Jinan, because there were many colleagues before me, and I absorbed their experience and made some improvements."

1953, Zeng Hou Cheng died. His children are all revolutionary cadres, unwilling to inherit and demanding that the state take over. 1955 new year's day, becoming the first private store in Wuhan. In February of the same year, under the instruction of the municipal party Committee, a branch was established in Huiji Road. 1April 3rd, 958,1September 2nd, 2002, President Mao Zedong came to the branch to taste the three fresh bean skins, leaving behind the teaching that "the country should serve the people better", which became the most brilliant chapter in the history of the old Tongcheng store.

This "old Tongcheng" has nothing to do with "Tongcheng County"
