What is three heads and one palm in Quzhou?

Three heads and one palm (rabbit head, duck head, fish head and duck's paw) is a traditional local snacks in Quzhou, Zhejiang Province, in which rabbit head is the most representative. Historical background

Legend has it that a long time ago, there was a family in Quzhou with three people, a blind grandmother and grandchildren. Because of his poor family, his grandson went to the streets to collect junk and barely made a living. The meat dishes that can be eaten all year round are basically duck heads and rabbit heads discarded by the neighborhood.

One day at noon, a passerby passed by their house, smelled a strong fragrance, and suddenly became hungry, so he curiously asked the blind grandmother what she was cooking.

The blind grandmother couldn't speak for a long time, and passers-by lifted the lid of the pot by themselves, and a pungent smell came to my face. The pot is full of duck heads and rabbit heads.

Passers-by began to eat before grandma could speak. Unconsciously, a pot of "good food" and an altar of Sanjiu liquor dedicated to the New Year were all eaten up by him. Passers-by were very sorry, took out twelve taels of silver, wrote a note and left in a hurry. When the grandchildren came home to collect junk, they opened the note and saw four big words "Good Head" on it, and the small words "Use this money to open a small shop, and the business will be booming" were affixed under the big words.

A gentleman has good laws and good wealth. Three generations inquired for half a year, but failed to find this kind person, so they opened a pot-stewed food shop next to the south gate of the city.
