In May 2017, the reporter entered the Haidilao Jinsong store after passing the interview and induction training. On the first day of employment, the reporter discovered traces of rats in the cup-washing room in the kitchen. In the next few days, reporters successively found traces of mice in the ingredients room, serving room, fruit room, dishwashing room, cup washing room and other places in the back kitchen of Haidilao Jinsong store. Some mice will crawl into cabinets containing food.

When the dishwashing room is not particularly busy, the staff will clean and wash dishes at the same time. Brooms and dustpans are used to clean floors, walls and drains, as well as dishwashers and lockers.

After the cleaning work is completed, employees will put the dustpan and rag into the dishwasher for cleaning, and the broom will be placed on the dishwasher conveyor belt to drain the water. When the reporter thought this was inappropriate and suggested to the dishwashing staff not to mix tools and tableware, the staff told the reporter: "Just do your own thing."

The dishwasher uses high-temperature sterilization to clean the dishes. Although the dishwasher is opened for cleaning every day, it only cleans the surface and does not remove the oil stains inside. "Look at the oil stained on it. It can't be cleaned. It can stink to death. If you crawl inside and smell it, the smell will be terrible." A staff member who was cleaning the surface of the dishwasher complained to the reporter.

I remembered to open the cabinet cover of the dishwasher at 7 a.m. on June 18, 2017. I could see that one side of the conveyor belt was covered with oil stains and emitted a rotten stench. The inner wall of the dishwasher was covered with oil stains and rotten food residue, and the reservoir inside the dishwasher was filled with yellow sewage. After draining the water in the dishwasher reservoir, the reporter found that the inner wall of the reservoir was covered with grease, and a thick layer could be scraped off with hands. Some fallen dishes can also be clearly seen in the reservoir, which are already covered with grease.
