The steaming pot exudes a tempting mixture of pork, soy sauce and dried cuttlefish. People sip the broth slowly. After eating, you will smack your lips and have an endless aftertaste. Changting people call Duan Dou, hence the name.
Gannan is rich in rice, beans and tea oil; Guangdong produces sea salt and seafood; Mountain products, such as mushrooms and auricularia, is produced in western Fujian. In the past, most goods were transported by horses. The ancient post road between Fujian, Guangdong and Jiangxi is the "salt and rice road" of Hakkas. In the long years, porters and grooms trudged for a living, and hundreds of miles of ancient post roads had to cross mountains and streams.
At that time, in Pengfang Village, Tongfang Town, Changting County, an ancient Hakka village, hundreds of tons of rice, beans and tea oil were transported to Xiaba, Pingyuan, Guangdong Province, and hundreds of tons of sea salt and seafood were transported from Xiaba to the north via Pengfang Village. Therefore, many people who carry loads and lead horses eat or stay in the inn of Pengfang Village. It is said that at the end of the Qing Dynasty, there were more than 20 restaurants and more than 30 tofu shops in the village, killing two or three pigs every day.
Porters, grooms and small traders carry dry food with them, such as rice in a bamboo tube or rice in a straw bag, plus a handful of soy sauce beans or a few dried hot and sour radishes. When business is good, they will also have a bowl of soup. They hold hot bowls in their hands, taste delicious meat and soup, talk about everything, and even sing a Hakka folk song when they are happy.
According to different materials, there are beef soup, pork soup, chicken soup and fish soup. People who eat soup have no status, although in the streets and alleys, people also stand on the roadside to eat, take a bite, pay and leave, which has become a unique landscape of Tingzhou ancient city.
Taking pork soup as an example, the production process is as follows: Slice lean meat, put it in a basin, add sweet potato powder and refined salt, and rub it with a little water until it doesn't stick to your hands. Heat a pot, add water, bring the mixed meat to a boil, add shredded mushrooms and shredded squid, cook together, then scoop it into a bowl, and add appropriate amount of pepper, monosodium glutamate, sesame oil and chopped green onion.
